Devilishly good DEVILED EGGS
The motivation to master Devilled eggs was simply the observation that guests love them. They are the cocktail or pre-dinner canapé. Their recipes are awash all over the internet:

Getting the boiling the egg right:
The trick apparently is use old eggs, and a bowl of chilled water (put in the deep freeze while the eggs cook) for smooth de-shelling. Not overcooking is also a concern.
We’re BOILING THE EGGS:
Great fail proof method to boil eggs without dark rings around the yellow yolk!
1. Place a bowl with water in the deep freeze for the cold bath after.
2. Take six eggs from the refrigeration and place carefully in a pot
with cold water one inch above the eggs.
3. Bring to the boil and allow to boil for 30 seconds.
5. Place a lid on the pot and turn off heat and
allow the eggs to sit for 12 minutes.
6. Remove the eggs to the cold bath.
When cool enough to handle tap the eggs against the side of the bowl.
Start peeling the egg shell from the bottom then top of each egg.
The side shell should slide off effortlessly.
Now we’re cooking THE FILLING:
Halve the eggs (cleaning the knife each time..press gently first then harder) and put the cooked yolks into a bowl and jazz up the mix with (here come the secrets) butter/dijon mustard/salt/pepper/apple cider/and or curry powder)
Removing the yolk by squeezing gently the ends of the egg. The cooked yolk shoul ‘Pop out’ effortlessly. Refer video and using a spoon prize the yolk out from the vulnerable end of the egg.
Looking for the better filling….
Mix with a fork the yolks with the 3 Dessertspoons of Mayonnaise; the 2 teaspoons of Dijon mustard; teaspoon of caper juice and dessertspoon of butter. Season with a mild Curry mix. Spoon or pipe the mix back into the cooked white halves with a teaspoon and knife and decorate with finely chopped chives or pinches of paprika of herb salt mix..
