What LEMON is the best lemon?

Not all lemons (as I recently learned) grow equal. The varieties mean the acidity can range. While New Zealanders (I am one) are mad about Mayer lemons….the gourmet aficionados amongst us know the sweet Meyer (yes sweet enough to eat alone..well nearly) does not pair well with oysters. Raw oysters new that face-puckering sour taste to bring theirs out to the best. So what lemon is the best lemon (for oyster lovers)?
